Ingredients:

Ingredient Amount
Zucchini, grated 1 cup
Flour 1 ½ cups
Sugar ½ cup
Egg 1 large
Baking powder 1 tsp
Cinnamon 1 tsp
Milk ½ cup
Butter, melted ¼ cup

Directions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the grated zucchini, sugar, egg, and melted butter.
  3. In another bowl, whisk together the flour, baking powder, and cinnamon.
  4. Add the dry ingredients to the zucchini mixture and stir until combined.
  5. Spoon the batter into the muffin cups and bake for 25 minutes or until a toothpick comes out clean.
  6. Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack.
