Ingredients:

Ingredient Amount
Sweet potato puree 1 cup
Flour 1 ½ cups
Sugar ½ cup
Egg 1 large
Baking powder 1 tsp
Cinnamon 1 tsp
Milk ½ cup
Butter ¼ cup, melted

Directions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the sweet potato puree, sugar, egg, and melted butter until well combined.
  3. In a separate bowl, whisk the flour, baking powder, and cinnamon.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Avoid overmixing.
  5. Fill the muffin cups ¾ full with the batter and bake for 25 minutes or until a toothpick inserted comes out clean.
  6. Let the muffins cool for 10 minutes before removing from the tin. Serve warm or at room temperature.
