Ingredients

  • 1 medium butternut squash (peeled, cubed)
  • 200g red lentils
  • 1 white onion (halved)
  • 3 garlic cloves
  • 1 inch ginger
  • 1 red pepper (chopped)
  • 250g tomatoes
  • 400ml coconut milk
  • 1 tbsp cumin
  • 1 tsp coriander powder
  • ¼ tsp chilli flakes
  • 1 tbsp oregano
  • 350ml stock or broth
  • Salt & pepper to taste
  • 1 tbsp oil

Directions

  1. Add the onion, garlic, and ginger to the Thermomix. Chop for 5 seconds on speed 5.
  2. Add oil and sauté for 3 minutes, Varoma temperature, speed 1.
  3. Add cumin, coriander, and chilli flakes. Sauté for 2 minutes, Varoma temperature, speed 1.
  4. Add the butternut squash, red lentils, red pepper, tomatoes, stock, and oregano. Cook for 20 minutes, 100°C, reverse speed 1.
  5. Add coconut milk and season with salt and pepper. Cook for another 10 minutes, 100°C, reverse speed 1.
  6. Check seasoning and serve hot with rice or bread.
